Eibach are probably the best. I think you can get Neuspeed and APEX as well, I'd have to double check though. I have Eibach in mine...

I think they use Eibach springs in the GC kit, do they not?

I am looking into buying springs for my Second gen, all year long daily driver. What is the least amount of drop I can do. I really want GC coil overs but I don't have the money.

The least amount? Well, probably stock height, unless you want to raise your ride height. I believe the Eibach is about an inch drop. Apex is close to two. Not sure about any others. With the GC, you could adjust to whatever you want, 0 to 3" I think.
